Soup of grandfather filippino

The soup of grandfather is an exclusive dish of Filippino in Lipari, a recipe passed on from generation to generation. Thanks to the simplicity of its recipe and to the perfect symbiosis of its ingredients, it keeps all the flavour of the typical cuisine of the Aeolian Islands.

Ingredients (4 servings)

1,5 l fish soup “ristretto”
2 tablespoons mirepoix cherry tomatoes
1 teaspoon ground basil
1 teaspoon ground parsley
1 tablespoon extra virgin olive oil
4 diced scorpionfish fillets (400 g) deboned
100 g diced fresh fettuccine
A dash of ground dried chilli
salt and pepper q.s.

Preparation

Bring the fish soup to the boil, add the cherry tomato, the fettuccine, the scorpionfish, the parsley, the basil, the chilli and add salt and pepper if necessary.
Add oil when it is cooked and serve hot.
